One of the best parts about Thanksgiving dinner are the leftovers. Turkey sandwiches are a staple around 9PM on Thanksgiving Day, however they can get old about 3 days post Thanksgiving. This is when I whip together this amazingly easy and delicious Thanksgiving Leftover Casserole! *pictures to come

Thanksgiving Leftover Casserole
Stuffing (about 3-4 cups or 1 box of Stovetop)
Turkey Cubed (about 2-3 cups) (could sub chicken or pork. Also could do shredded)
About 2 cups Green Bean Casserole OR 1 can drained green beans, 1 can Cream of Mushroom soup, 1/2 cup milk
Fried Onion Straws (about 1 cup)
Preheat oven to 350 degrees F.
In a 9x11 baking dish, layer the bottom of the dish with stuffing.
Layer the turkey.
Layer the green bean casserole OR the green beans, followed by the cream of mushroom soup mixed with milk drizzled on top.
Cook for 30 minutes. Remove and top with onion straws.
Return to oven for another 5 minutes.
Serve!
I like to serve this with a side of cranberry and gravy!
This recipe is very easy and very forgiving. I always eyeball the amounts and will tailor it to who I'm making it for. My kids aren't a huge fan of stuffing so when I'm making it for them I'll use less!
