Cold weather to me means soup season!! I love making soup and it is such an easy dinner! Most of my recipes are either crockpot recipes or less than 30 mins! This Italian Tortellini soup is a family favorite and packed with flavor! I just made it last night for my family of 4 and we had 2 containers full of left overs! I love to freeze any left overs for an even easier meal the following week!
Ingredients:
-1lb. Bulk mild italian sausage
-1/2 cup onion, chopped
-2 large carrots, chopped
-3 cloves minced garlic
-32oz. Chicken broth (I double this for a more brothy soup)
-1 (12oz.) package refrigerated cheese tortellini
-2 cups fresh spinach
-salt & pepper to taste
1. In large soup pot, cook sausage, onion, carrots and garlic over medium heat for about 8 minutes, stirring until sausage is cooked through.
2. Stir in broth and heat to boiling
3. Next, add in tortellini and reduce heat to low, cook 10 to 12 minutes until tortellini is tender.
4. Stir in spinach and cook for 1 to 2 more minutes until spinach is wilted. Serve!

I like to add grated parmesan cheese! This soup is so yummy! Enjoy!
